Ingredients

1 TbspVegetable oil
1 cupSwiss brown mushrooms, reduced salt
1 cupGreen beans, finely sliced lengthways
½ cupBok choy, chopped
250 gUNCLE BEN's® Rice Medley
¼ cupFinely chopped spring onion
1Red chilli, small in size, thinly sliced

Citrus miso dressing

1 TbspFreshly grated ginger
2 TbspSoy sauce, reduced salt
3 TbspOrange juice
1 TbspMiso paste
1 TbspSesame seeds
1 pinchFine salt

Directions

  1. Heat oil in a large non-stick frying pan or wok over a medium-high heat.
  2. Add mushrooms and sauté for 2 minutes.
  3. Add beans, bok choy and rice.
  4. Pour over citrus miso dressing and cook for a further 3-4 minutes, stirring frequently.
  5. Divide between 2 bowls, top with chilli and spring onion, and serve immediately.

Citrus miso dressing

Combine all ingredients in a small bowl or jar and whisk until miso is fully incorporated.
